"Chinese food in the USA vs. China"

You know, it's funny, authentic, traditional Chinese food is extremely rare in the US, practically non-existent. Sure, there are thousands of Chinese restaurants, but most of them have adapted to American tastes over the decades, and over time the original dishes fade into something else entirely. The real thing, the dishes families actually cook at home in China, is almost impossible to find here. And what's interesting is that it's not just about the ingredients; it's about the techniques and the regional traditions that get lost in translation. Real traditional cooking, the kind passed down through generations in specific regions, is a whole different world from what most people here have ever tasted. It makes me wonder: if you've never had the real thing, how would you even know what you're missing? Have you ever had a meal that felt genuinely traditional, or is that something you've only heard about?
